Chief Steward
Job Overview
We are seeking an experienced and detail-oriented Chief Steward to lead the stewarding operations and ensure the highest standards of cleanliness, hygiene, and safety across all kitchens and food & beverage outlets. The role is critical in supporting smooth kitchen operations and maintaining compliance with hygiene and food safety regulations.
Key Responsibilities
Manage and supervise the stewarding team across all F&B outlets
Ensure cleanliness and sanitation of kitchens, stores, equipment, and back-of-house areas
Implement and monitor hygiene, HACCP, and food safety standards
Coordinate with Executive Chef and F&B team to support daily operations
Control inventory of cleaning supplies, chemicals, and kitchen equipment
Plan stewarding manpower schedules and duty rosters
Train stewarding staff on proper cleaning, chemical handling, and safety procedures
Ensure proper waste management and recycling practices
Maintain dishwashing operations to support service flow during peak hours
Conduct regular inspections and prepare for internal and external audits
Requirements & Qualifications
Proven experience as Chief Steward or Stewarding Supervisor in a hotel or large restaurant
Strong knowledge of HACCP, food safety, and hygiene standards
Experience managing teams and duty rosters
Good communication skills in English (other languages are a plus)
Physically fit and able to work flexible shifts
Familiarity with UAE food safety regulations preferred
Leadership skills with a hands-on approach
